Seven Layer Salad "Latino Style"

 

I cooked this latino style seven layer salad for a party and, let me tell you, it was a hit. Everybody was asking me about it and then I thought it was a good idea to publish it in my dominican food website.


It's really easy to prepare. As soon as you get all the ingredients, you can start laying your vegetables. Use your imagination when cooking, it's really fun! :o)

 

Ingredients:

  • 1/2 lb white onions, cut into wheels 
  • 1 lb beets, cut into wheels
  • 1 lb chopped cabbage
  • 1 lb sliced carrots
  • 2 cups petit pois peas
  • 2 cups corn kernels (I use canned sweet corn)
  • 3 tablespoons olive oil (use extra virgin olive oil, it's much better)
  • 1 chicken flavor bouillon cube (Maggi or Knorr, in the hispanic section of your supermarket)
  • 1 mayonnaise jar (low fat for a healthier meal)
  • 1/4 cup sour cream (also low fat if you prefer)
  • Celery to decorate (optional)


Directions:


You can prepare this seven layer salad really fast. Start by dissolving the chicken flavor bouillon cube in hot olive oil to make a chiken broth, then set aside. In a cristal salad bowl, start laying all your vegetables.


I started mine with cabbage and some onion in the bottom, then I added carrots, beets, petit pois and corn kernels.


Mix the mayonnaise with the chicken broth you set aside. Add the sour cream and mix well. Pour this mix over the layered vegetables and decorate with some onion wheels and a bit of celery.


This latino style seven layer salad is an excellent holiday recipe to enjoy with family and friends.
