Tender Steak Cuts For Pan-Frying

 

Cooking steak is pretty easy once you know the meat cuts you need for your recipe and how you are going to cook it. In Dominican Republic, the bistec encebollado or beef steak with onions is a traditional recipe. We use a frying pan or skillet to cook this dominican food.


And it is very easy to make. My mother used to cook it sometimes and it was so delicious. Definitely you have to know your meat stuff before buying any beef cut. I learned this the hard way. For my recipe I didn't have too much info about it, I just rushed to my nearest supermarket to buy any lean steak cut that looked nice to me.

 

I ended up buying thin round of the eye beef steak. Oh my God!! It lasted more than two hours for the steak to tenderize. But the wait was well worth it... My beef steak with onions was yummy. :-D


So, I decided to do some research about steak cuts good for pan-frying to educate myself. Here is what I found out:

  • The most tender steak cut of all is the tenderloin (the filet mignon comes from it), but it's a bit pricey.
  • The second one is the flat iron, not as pricey as the tenderloin.
  • The rib steak is also tender.
  • The sirloin and the rib-eye (not as tender as the tenderloin, but more flavorful).
  • The sirloin or top sirloin, lean and boneless with good price.
  • The strip steak, better known as N.Y. strip, is tender too, lean and filled with flavor. It comes with or without bones (boneless is better for this recipe).
  • The tri-tip roast, as the N.Y. strip, this one is tender, lean and flavorful. You can recognize it by its triangular shape.


For cooking steak on a frying pan or skillet, the steak always must be cooked over high heat in a large frying pan (to accomodate the filets loosely). If the pan has a heavy bottom, great! Because it conducts the heat better. You can use a large heavy cast aluminium frying pan or skillet.
